And, now this incredible spot in York has taken it to another level with its mad scientist-esque take on ice cream with the use of liquid nitrogen to create weird and wonderful flavours of ice cream.
Kicking around York since 2018, Diana’s Cafe York, formerly, [N]ice Cream Factory can be found on Fossgate in the city centre. The technique involves pouring liquid nitrogen over inventive mixes and churning them to creature wonderful scoops of ice cream.

Quite fitting for York, the ice cream creations are like something out of Harry Potter. Diana’s Cafe has some fantastic made to order and instantly frozen nitrogen ice cream creations with all the smokey cauldron vibes you could ask for.

They have a range of flavours such as Lotus Biscoff, Espresso & Walnut, Turkish Delight, Chai Latte and our favourite the classic British dessert Eton Mess, which is a vegan option with velvety coconut cream, juicy strawberries, and crunchy meringue!
There are plenty of other flavours to try including a range of specials throughout the year- so you’ll never have the same one twice.
Once the magic happens, you’re ice cream is served up in little tubs to help you cool down on a hot summers day.
